My kiddo said this was the best dish I cooked so far. And of course it required no cooking at all. I didn’t have cucumbers so I used avocado instead and I also used balsamic vinegar instead of sherry vinegar and stuck with no garlic this time around. It was incredibly delicious. Big hit in my house. Will have to cook it again when it’s tomato season and the tomatoes are even more delicious.

Ok this was really heavy at first. I didn’t love the flavor of Worchestire sauce and some others, so when I first made it, I didn’t want to eat a lot of it which was a bummer because this did take a LONG time to make. But then it was delicious when I reheated later. For some reason I didn’t seem to mind the flavors then. So it’s still a win in my book!
